Nutrition in the Kitchen

Compounding the challenge of consuming a healthy diet is the fact that many students have little or no familiarity with preparing their own food.  The result is inadequate diets that do not support optimal health and academic performance. To help remedy this pervasive problem, my initiative is to engage nutrition students in creating a collection of instructional videos to fill the gaps in students’ knowledge of the science of healthy eating and how to provide themselves with home-cooked meals that will meet basic dietary guidelines.  Students will create 2 -3 minute videos that demonstrate how to prepare a wide variety of dishes that are fast, simple, and inexpensive, as well as provide nutritional information about the dish and its contribution to a healthy diet. My vision is that all of these videos will be the start of a growing library of instructional materials that may be accessed by UT students.  Videos posted for public access will be licensed under the Creative Commons license that prohibits sharing of adaptations and commercial uses. The expectation is that this initiative will provide rewarding educational experiences for our students, both now and in the future.  New content can be continually added, providing both ongoing learning opportunities for students creating the videos and an ever-growing variety of content, promoting further enrichment of this resource.
